Dry ice cleaning in the food industry: HACCP-compliant and chemical-free
HACCP-compliant dry ice cleaning for food businesses: no chemicals, no water, no production downtime. Bacteria kill rate of up to 99.9%. Up to 80% faster than manual cleaning.
Food industry: dry ice blasting
In food production, hygiene and food safety come first. Conventional cleaning methods using water and chemicals do meet the basic requirements, but they have considerable drawbacks: moisture encourages bacterial growth, chemical residues require time-consuming rinsing, and drying times extend production downtime.
Dry ice cleaning eliminates all three problems at once. The process works entirely without water and without chemicals: on impact, the CO₂ sublimates to gas without residue. There is no moisture that could encourage germ growth, no chemical residue that has to be cleaned off afterwards and no drying time. Production can restart immediately after cleaning.
Of particular relevance to quality managers: dry ice cleaning is fully HACCP-compliant and meets the requirements of IFS Food, BRC and Regulation (EC) No 852/2004. Studies show a bacteria kill rate of up to 99.9% for E. coli, salmonella and listeria, through the thermal shock effect at −78.5 °C alone.
Typical applications:
Food industry
Dry ice blasting solves industry-specific cleaning tasks where conventional methods reach their limits.
Baking ovens & industrial ovens
Burnt-on encrustations, carbonisation and dough residues are loosened from baking surfaces, heating elements and oven walls without attacking the coating.
Mixers, kneaders & agitators
Protein deposits, dough residues and grease residues in kneading and mixing equipment are removed without residue, even in hard-to-reach areas.
Conveyor belts & conveyor chains
Food residues, allergen cross-contamination and adhesive residues are loosened from belts and chains, and this is possible during operation.
Packaging machines
Label residues, adhesives, film residues and product deposits on sealing jaws, cutting blades and feeds are removed with precision.
Cold rooms & cold stores
Mould, biofilm and ice build-up are removed from walls, ceilings, evaporators and racking systems without introducing additional moisture into the refrigerated area.
Filling lines & moulds
Product residues, release agents, starch and biofilm in filling lines and baking tins are removed without residue. Ideal for allergen changeovers between batches.
Food industry: why dry ice?
Food industry: these industry-specific benefits make dry ice blasting the most efficient cleaning solution.
HACCP-compliant: no chemicals and no water
Dry ice cleaning meets all requirements of Regulation (EC) No 852/2004, IFS Food and BRC. No water means no breeding ground for germs. No chemicals means no risk of residues, and no rinsing.
Bacteria kill rate of up to 99.9%
The thermal shock at −78.5 °C has been shown to kill or inactivate pathogenic germs. E. coli, salmonella and listeria are reduced by more than 99.9%: an additional hygiene benefit that no purely mechanical cleaning offers.
Up to 80% faster than manual cleaning
Practical data from industrial bakeries shows savings of 24 to 30 person-hours per week. In one documented case, dry ice cleaning replaced 25 manual cleaning staff, with better hygiene results.
Allergen changeover without cross-contamination
During allergen changeovers between production runs (nut, gluten, milk protein, soya), dry ice removes all residues, leaving nothing behind. No chemical cleaners that could themselves contain allergens.
No drying time: immediate restart
As no water is used, the drying phase is eliminated completely. The production line can restart immediately after cleaning, which is crucial with tight production schedules.

Dry ice vs. alternatives
Food industry: a direct comparison shows why companies are switching to dry ice blasting.
| Criterion | Dry ice | CIP cleaning | Manual wet cleaning |
|---|---|---|---|
| Water consumption | Zero | Hundreds of litres per cycle | High consumption + waste water |
| Chemicals | None | Caustic, acid, disinfectant | Cleaning agents required |
| Drying time | None: ready for production immediately | Rinsing + drying | Hours until dry |
| Bacteria reduction | 99.9% (thermal shock) | Depends on temperature/chemicals | Variable results |
| Allergen changeover | Residue-free changeover possible | Rinsing required | Risk of residue |
Food industry: FAQ on dry ice cleaning
Food industry: answers to the most frequently asked questions about dry ice cleaning.
Can’t find your question?0800 0010982 · Mon to Fri, 7:00 to 18:00Yes. The process works without water, without chemicals and without residue. It meets all requirements of Regulation (EC) No 852/2004, IFS Food and BRC. The CO₂ used is food-grade (E 290).
Yes. During allergen changeovers between production runs, dry ice removes all protein residues (nut, gluten, milk, soya) without residue. There is no need for chemical cleaners, which could themselves contain allergens: a direct contribution to allergen management under IFS Food 6.1.
Yes. CO₂ is approved as food additive E 290 (it is also used in beverages). It sublimates to gas without residue. The process is approved by the FDA, USDA and EPA and is covered by the guideline of the Industriegaseverband (German industrial gases association).
The frequency depends on the type of production. Bakeries typically clean weekly, meat processors after every shift change, and dairy processors as a regular supplement to their CIP cleaning. We define the optimum frequency together with you as part of your HACCP plan.
Dry ice is an ideal complement to CIP (Clean in Place), but does not replace it completely. CIP cleans closed pipework systems from the inside, while dry ice cleans open surfaces, machines and hard-to-reach areas. Combined, the two processes significantly reduce total cleaning time.
